Dear Blog...

Dear Blog...

Please forgive me for neglecting you so...
In the past few days
I have heard stories that would curl you toes,
witnessed sin that has mastered a soul,
and I have been blessed with things untold.
So, PLEASE, Dear Blog... be patient with me
as the Lord helps me process the contents of my heart.
O, how I look forward to catching up with other's,
filling your blanks spaces
and visiting new places.

Strolling...

Today I woke up and took a stroll around the garden.
I thought I would take you along.
It's a small garden so you won't need your walking shoes and
then, perhaps, we can share a cup of coffee or tea...if your please.

My family has been walking a tough road lately and
our hearts are burdened for a loved one.
Jen and I will be driving to Oklahoma this week
to visit this loved one, while
the Cute Engineer and Katie are staying home
to take care of the cottage
AND one super spunky scottie.

To borrow a quote from Beth Moore..."you won't be wasting a prayer on us"

and...just because this made me smile!

Because you asked...

We ate,
We laughed,
We sang Happy Birthday (Robert Goulet style),
We laughed some more,
We enjoyed!

Because you asked, here are the recipes...

Green Chile Enchilada Casserole

1 pint green chile, chopped
2 cooked chicken breast halves
1 can cream of mushroom soup
1 can cream of chicken soup
2 cloves garlic, minced (I use 3-4)
1 cup sour cream
1 package corn tortillas
1 large onion chopped (very, very fine)
1 pound grated cheddar cheese

Mix together the first six ingredients.
Heat in saucepan, stirring slowly to keep form sticking.
Soften tortillas in microwave.
Layer in a large greased casserole beginning with the tortillas, then sauce, cheese, and onion. continue layers, ending with cheese.
Bake in 350-degree oven for 25 minutes.
Makes 6 generous servings

(this recipe is from my MIL, she is an amazing cook)

Derby Pie

4 eggs slightly beaten
2 cups sugar
1 cup flour
2 sticks soften butter
2 tsp vanilla
2 cups chocolate chips
2 cups chopped pecans (optional)

Cream butter and sugar. Add eggs and vanilla, mix. Add flour, mixing well.
Stir in chocolate chips (and pecans). Spread into 2 unbaked 9" pie shells.
Bake at 350 for about thirty minutes.

A Celebration!

Today, there will be a celebration going on at the cottage.
It's that cute engineer's 48th birthday!
There is a derby pie in the oven and
the ingredients for green chili casserole are ready and waiting.
Rumor has it that treats have been left in his office
and maybe a practical joke or two.

So, cute engineer hurry home there is a party waiting just for you!

Preparations

Preparations are in full swing here at the cottage!
Jen will be leaving for Virginia in a few short weeks
and this momma is so excited for her!
There has been much shopping going on
as well as a few lunches for strategic planning purposes only of course!
The list is growing small and time is passing all to quickly but
I have to tell you we have been having the time of our lives!



A while back Jen and I went shopping for fabric
and guess what I made for my girl?
Yep, a quilt!

I love the fabric Jen chose!
It fits her personality to a tee.
What a privilege it was to make this quilt for my sweet girl.

Now

I am off to have some ice cream :)

Speaking of...



Last week I was out playing in the garden.
Took a few pics!

and had a conversation with myself that went something like this...


Note to self...need more perennials that flower in the heat of summer.
Speaking of heat it is HOT, HOT, HOT.
Don't forget to fertilize...those impatiens look simply dreadful.
I wonder if others are having the same problem with their annuals not growing.
Hmmmm
What should I fix for dinner?
Hay... maybe the fam would like to go out.
Eating out is always good...O wait Jen won't be home.
Hmmmm
Wonder if Katie will be here for dinner.

What was that? Libby did you see that?
There is a bunny in your yard,
What are you going to do about it?
(Que the bunny to dash across the yard and into the hosta's and one cute scottie on a mission to get that bunny)
Libby please don't get the bunny I really don't want to clean up that mess!
